Pecan Pie Recipe
Ingredients:
1 Pillsbury Refrigerated Pie Crust at room temp
1 1/2 cup whole or chopped Pecans
1 cup granulated sugar
1 teaspoon table salt
3 tablespoons PURE Butter, softened
1 cup Karo. White Corn Syrup
3 large fresh eggs, slightly beaten
1 teaspoon PURE vanilla extract
Directions:

Preheat oven to 325 degrees F. Prepare pie crust as directed on the package. Prick holes around the sides and bottom with a fork. Lay a piece of waxed paper or foil in the bottom of the pie shell. Cover with dry beans or rice (they will be fine to cook later) to weigh down and bake for about 8 to 10 minutes until only partially cooked. Remove from oven. Remove materials used to weigh down the crust and discard. NOTE: I have used a second heavy pie dish inside to weigh it down. Works great!

Put about half the chopped pecans in the pie shell. Combine salt and sugar. Cream together with the butter, add the slightly beaten eggs, corn syrup and vanilla extract. Pour this mixture over the pecans. Pour the rest of the pecans in and press down a bit with a large spoon or spatula so they will be moistened by the filling.

Bake at 325 degrees F for about 50 minutes or until a toothpick or knife placed in the center comes out clean. Cool on a rack and serve : (my Opinion)
serve with REAL whipped cream BEST tasty treat!

Have a happy thanksgiving too! :)

Here are few that I make. Two of them are a good spin.

Pecan pie

INGREDIENTS
3 eggs
1 cup brown sugar
1 tablespoon all-purpose flour
1 cup corn syrup
2 tablespoons butter
1 teaspoon vanilla extract
1 1/2 cups pecans
1 (9 inch) unbaked pie shell

DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Place pie shell in a 9 inch pie pan.
In a medium bowl, gently beat eggs. Stir in sugar and flour, then the syrup, butter and vanilla. Fold in pecans. Pour mixture into pie shell. Bake for 50 to 60 minutes; knife inserted in center of pie should come out clean.

Chocolate Pecan pie

INGREDIENTS
1 recipe pastry for a 9 inch single crust pie
1/3 cup butter
2 (1 ounce) squares unsweetened chocolate
3 eggs
2/3 cup white sugar
1/2 teaspoon salt
1 cup light corn syrup
1 cup pecan halves

DIRECTIONS
Preheat oven to 375 degrees F (190 degrees C).
Heat butter and chocolate over low heat, stirring constantly, until chocolate is melted; cool slightly.
With hand beater, beat eggs, sugar, salt, chocolate mixture and corn syrup. Stir in pecans and pour mixture into pie shell.
Bake until set, 40 to 50 minutes. Cool slightly. Serve warm, or refrigerate and serve with nondairy whipped topping.

Maple Pecan pie------ Very Good!! Handed down to me from my great grandmother.

INGREDIENTS
1 1/4 cups all-purpose flour
1/2 teaspoon salt
1/2 cup shortening, chilled and diced
3 tablespoons ice water
2 teaspoons butter
1 1/2 cups chopped pecans
3 eggs, beaten
1 cup real maple syrup
1/2 cup white sugar
1/3 cup butter, melted
1 teaspoon vanilla extract
1/2 teaspoon salt

DIRECTIONS
In a medium bowl, mix together flour and 1/2 teaspoon salt. Using a pastry blender or two knives, cut half of the shortening into flour mixture, until fine crumbs form. Cut in remaining shortening until coarse crumbs form. Add water, 1 tablespoon at a time, tossing with fork until a dough forms. Shape dough into a disk and wrap in plastic wrap; chill for 30 minutes.
Preheat oven to 350 degrees F (175 degrees C).
On a floured surface, using a floured rolling pin, roll dough into an 11-inch circle. Fit dough into a 9-in quiche dish. Trim edges
In a heavy skillet, melt 2 tablespoons butter over low heat. Add nuts and stir for about 5 minutes, or until nuts begin to color. Let cool for 10 minutes.
Mix together beaten egg, maple syrup, sugar, 1/3 cup melted butter, vanilla, and 1/2 teaspoon salt. Stir in nuts. Pour filling into crust. Bake for 45 to 50 minutes, or until filling is set. Transfer pan to wire rack and cool.

Kayro (DARK) recipe is the basis of my family's. Start with that and modify slightly over the years.
