I went to a job fair today and spoke to a nursing recruiter and was wondering if I should send a thank you note as a follow up.

A follow up note is considered proper interview etiquette. It is always a good idea to send a note about 3-4 days after speaking to someone, especially when they have probably have spoken to several people. Also, include another copy of your resume. If you were at a job fair, your last one is in a pile of 200 and will get seen in time.

As a note, I am personally against salary histories and demands, in follow up and interest cover letters. Many times they ask for this, but it is often better to discuss those issues in person. If you ask too much, you could lose a good job that is perfect for you, and if you ask to little, you'll get it.

Send the note. Send it on the best cotton fiber paper you can afford, and get good quality resume paper in a color other than white. These are tips I have learned from the HR people over the years.

Not a bad idea.
If you are interested in the job it would help them remember you and it's on the other hand just a decent thing to do.
