The meal the first time it's cooked was delicious but putting it in the microwave or re-heating it makes it taste like cardboard... Why does this happen? why isn't it as delicious as the first time around.

probably because you keep it in plastic containers and then reheat them in the microwave and the plastic particals are absorbed by your food

Simple answer? The meal wasn't the kind of thing that lends itself well to leftovers. In my opinion, most egg-based dishes are like that. I also felt that way about almost all animal flesh when I ate it.

I find that most stews, chilis, and curries taste better if they are re-heated the next day. There are, if you'll believe it, recipes that specifically suggest letting a dish sit overnight before you serve it so the flavors can develop.

Some leftovers are better cold than hot, too. (Take for example, pizza and most Chinese.)

Probably because re-heating the food makes it dry out.
Some dishes actually do taste better the next day. The flavors absorb and as a result the entree becomes quite tasty.

When we have left overs we tend to place them all in the same container or one the same plate to warm. This causes the flavors to blend together altering the original flavour of the foood. Also the kind of container you use will also leave trace flavors from past foods.
