The 60 and 80GB PS3's are the ones that can play PS1 and PS2 games. The 40 GB PS3 isn't backward compatible at all.

Also, the 60GB PS3 has the best backward compatibility because it has the Emotion Engine ( a special chip) that allows it to be compatible with almost every PS1 and PS2 game.

The 80GB PS3 can't play as many PS1 and PS2 games as the 60GB PS3 can because it doesn't have the Emotion Engine, it uses Emulation Software to be backward compatible, but it still can play a lot of PS1 and PS2 games though.

Every PS3 plays PS1 games, so you don't need to worry about that. However it's upscaling games you should take into consideration. Since you've a HDTV, the best choice for you is the 80gb.

The 80gb has HD upscaling, so any PS1 or PS2 game you play will be turned into a sort of quasi-HD format. This means they'll look better on your HDTV instead of just being stretched to fit (which can make the picture look like crap).

The only downside is that the 80gb doesn't have the best compatibility with PS2 games, it's the 60gb that does (but has no upscaling).

All 4 versions (20, 40, 60, and 80) play PS1 games. The 40 does not do PS2, but it still has PS1 playback.
