If you want quick, just open a can. It takes time to make good homemade soup. I start by putting a pot of water on the stove to boil, then I start peeling a few potatoes. I cut up potatoes, carrots, onions, and put them into the water. Then I add salt and seasonings. At this point you can add chunks of meat. When the soup is nearly cooked I add peas, chopped broccoli and peppers, because you don't want them to cook too much and become mushy. That's about it. You can add anything you like, because it's your homemade soup.

I always seem to buy loads of broccoli, so a cream of broccoli soup often is on the menu. It's simple and very healthy.
Just boil some bro coll in water with onions and a bit of garlic. I add some flavour using chicken or vege stock bouillon cubes (so easy), any fresh herbs I have on hand and a dash of black pepper. Let it simmer for 8-10 minutes, cool a bit and then puree in a blender or food processor.
You can stir in some creme, but I find it good on it's own.

In a soup pot, pour in about 2 T vegetable oil. Add chopped onion. Cook until transparent. Add any and all leftover vegetables from the fridge. Cook until heated. Add any leftover meat. Fill pot with a large can of chicken broth plus enough water to fill the pot OR, fill the pot with water and bullion cubes (chicken/beef, you pick) to taste. Add spices you enjoy - bay leave (remove before serving), parsley, oregano, etc. Heat to boiling.
If you enjoy a thin soup, leave it as is and serve. If you want a thicker soup, mix together a couple of T corn starch with COLD water. Whisk until smooth. Slowly add to soup. Allow to thicken. If you prefer a heavy creamed soup, blend the soup in a processor to a creamy consistency. Return to pot and add sour cream to thickness/taste and reheat.
A great way to clean out the fridge.

Vegetable soup. Begin with a large onion, a large carrot and a leek or some celery stalks diced.
Soften for several minutes and add water or stock.
Toss in some frozen vegetables, bring to a boil and simmer until cooked.
Season to taste and serve.

My family loves this tortilla soup that I make and it is super simple. You can use either beef or chicken.
Brown 1lb hamburger meat. Season with your choice of seasoning. Drain grease. Add on large jar of salsa, 3 cans of beef broth, and 1 can of corn drained. Let all ingredients simmer for about 30 minutes. The longer it simmers the better it tastes. Garnish with tortilla chips, shredded cheese and sour cream.
If you use chicken, shred the chicken after cooking it and use chicken broth instead of beef broth.

Broccoli Cheese Soup!
This recipe is very quick and simple and tastes delicious!
INGREDIENTS
1/2 cup butter
1 onion, chopped
1 (16 ounce) package frozen chopped broccoli
4 (14.5 ounce) cans chicken broth
1 (1 pound) loaf processed cheese food, cubed (Velveeta or store brand)
2 cups milk
1 tablespoon garlic powder
2/3 cup cornstarch
1 cup water
DIRECTIONS
In a stockpot, melt butter over medium heat. Cook onion in butter until softened. Stir in broccoli, and cover with chicken broth. Simmer until broccoli is tender, 10 to 15 minutes.
Reduce heat, and stir in cheese cubes until melted. Mix in milk and garlic powder.
In a small bowl, stir cornstarch into water until dissolved. Stir into soup; cook, stirring frequently, until thick.

Boil chicken in water and/or chicken broth. Add garlic, salt, pepper and any other seasoning you like. Remove chicken and take off meat. Put meat back in broth, add frozen veggies and noodles. Bring to boil again. Cook until noodles are soft. I'm making some right now, but without the veggies (my family doesn't like eggies in their soup)

Chicken noodle soup. I use the thick egg noodles, pieces of chicken, pieces of celery, carrots and can't forget the chicken broth. It's the best with a side salad or bread sticks.

Easy. Chicken and rice soup.
Just boil some chicken and chop or shred it in little bits. Prepare some rice as usual. In a big pot boil water and add shredded carrots, finely chopped celery, chicken, rice, salt, pepper, and some boullion cubes to taste.
Don't worry about measuring anything. Simple.
