Most scholars today (Christian and secular) believe that Paul was a real person, and credit him with the writing of at least the majority of the books that bare his name in the Bible. Some debate the letters of 2 Timothy and Titus, which deal with church government, offices, and organization, arguing that such a heirachy would not yet have existed at the time Paul wrote. Although references to just such a structure are found in the later chapters of the book of Acts.
Some also have tried to discredit Paul's letter to the Ephesians because there exist a couple late 5th century copies that lack the words "at Ephesus" in the opening greeting. This would breaks Paul's pattern of name the church or group to which he writes in the opening. Yet when read in conjunction with the other letters, the style, content and theology is very consistent with the others.
But beyond that no serious scholar that I have found debates the existence of Paul of Tarsus.
If he did not exist, then his letter did, because we have quotes from them that date to with a handful of years of their begin written. Also copies still exist (such as a manuscript in fragments from which 72% of the writings - including portions of every one of the books - can be reconstructed - with the text we use today perfectly fitting in the holes) that date within 20 years of the time of Paul. If he did not exist, then someone write all of his letters during the time when he supposedly lived and circulated them to where they were being copies, quoted, debated, and treated as scripture during his lifetime.
