Sweet-Potato Pie with Spiced Crust

Pastry

2 C. all-purpose flour
2 T. sugar
1/4 t. cinnamon
1/4 t. nutmeg
pinch salt
3/4 C. vegetable shortening
4 to 5 T. fresh orange juice



Filling

2 large eggs, beaten
1/2 C. sugar
1 1/2 C. cooked, mashed sweet potato
1 C. milk
2 T. butter or margarine, melted
1 t. cinnamon
1/2 t. nutmeg
1/4 t. salt
1/4 t. cardamom
Whipped cream (optional)

Make pastry: Combine flour, sugar, cinnamon, nutmeg and salt in a large bowl. With a pastry blender or 2 knives, cut in shortening until mixture resembles coarse crumbs. Gradually add orange juice, tossing with a fork, just until pastry holds together. Shape into a ball; flatten into a thick disk. Wrap well in plastic wrap and refrigerate 1 hour or overnight.

Make filling: Whisk together eggs in a large bowl; whisk in sugar, then remaining ingredients.

Heat oven to 425° F. On lightly floured surface, roll pastry into a 2-inch circle. Fit into a 9-inch pie plate, leaving a 1-inch overhang. Flute edge.

Pour in filling. Bake 10 minutes.

Reduce oven temperature to 300° F. Bake 25 minutes. Cover edge loosely with foil. Bake 25 minutes more or until a knife inserted in center of filling comes out clean. Cool completely on wire rack.

Serve with whipped cream, if desired.

Makes 8 servings.

Warm Banana Upside Down Cake with Hot Chocolate Sauce

Cake
2 cups salad oil
4 cups sugar
8 large eggs
12 mashed ripe bananas
8 cups flour
4 tsp. baking soda
2 tsp. baking powder
2 tsp. salt
3/4 cup milk 1 T vanilla extract

Sauce
1 pound semi-sweet chocolate
1 cup milk
1/2 cup whipping cream

Makes 12 large muffins

Making The Cake
Preheat oven to 350°F. Grease and flour muffin tins or line them with paper baking liners. Mix oil and sugar together. Add eggs and bananas to oil mixture. Sift together flour, baking soda, baking powder and salt. Add to mixture. Add milk and vanilla. Make sure batter is well mixed. Fill muffin tins 3/4 full. Bake for 15-18 minutes.

Preparing the Chocolate Sauce
Melt semi-sweet chocolate (preferably Callebut, but any bakers chocolate will do), in a double boiler over simmering water. When chocolate is completely melted and warm, remove from double boiler. Add milk and whipping cream. Stir into chocolate until combined.

Finishing The Cake
Serve cakes immediately with hot chocolate sauce.

put oil in pan layer of pine=cover with bark brown sugar>add mix add raisins inside> make frosting> Confection sugar> melt butter 1/2 stick<> juice from pine= Almond liquor if you have some Rum>Will work mix till you have a 1 3/4 cups let stand thick> When cake is cool then put frosting on> then fridge You can add fudge swirls if you have a sweet tooth> You can put more pine= threw the cake if you want more>

I love creamy ingredients so most of mine are creamy. The first is a puff pastry dessert. Cut frozen puff pastry and cook according to your package directions. Then let them cool and cut in half. In a food processor mix up room temperature marscapone cheese, 1 small container of ricotta cheese, a capful of vanilla, 1 heaping tbsp. of sugar. Spread this mixture in about 1/2" thick on both halves of your puff pastry. Lay some thinly sliced strawberries on one half and cover like a sandwich with the other. Then warm some nutella in the mic until drizzly and drizzle over the pastry. If you want to get real fancy sprinkle over some chopped hazlenuts. If you want something that is going to look really fancy in a dish you can deep fried wantons and layer this three times with similar effects. They are both really good.

Another really good simple dessert is to deep fry cheap refridgerator biscuts. Don't get the large flaky ones, they are too thick and buttery. It actually makes it too rich. Fry these until they are light and golden brown. Drain on a paper towel and sprinkle with sugar. Then take a pastry bag (or ziplock bag) and fill with a tip (you can get these next to your instant cake aisle near the frosting) and vanilla pudding. Let some frozen strawberries in heavy syrup and put it in the blender and let this strain through a fine seive. Pour over the buscuits and top with fresh whipped cream. Oh my goodness it's delish. You can do this with any flavors. I have actually done it with peaches and vanilla, rasberries and chocolate, butterscotch and just whipped cream and nuts. It's a perfect mixture of sweet and salty.

hot fudge cake really easy to make. Take a cake mix and follow the instructions then in a second bowl add in 1/2 brown sugar with 1/4 cup coco powder and 1 cup of hot water mix well. After spreading cake mixture in the pan slowly pour over the coco mixture DONOT MIX IN let it set on top. bake the cake according to instructions on the box and add in 10 minutes to baking time. Server this warm with icecream or whip cream can or homemade. your guest will love it. to make whip cream your self just take a cold glass bowl and add in whipping cream and slowly add in powdered sugar and beat on med - high with a hand blender add in a bit of vanilla to taste that is it. this is called pink stuff
12oz cool whip,small can crushed pineapple ,can of sweetned condensed milk and a can of cherry pie filling
Mix all together in a large bowl and let set overnight in refrigerator . I guess you can use other pie filling and it would be just as good . good luck and god bless.

Here are a few that my family loves!! Enjoy!!!

Apple cherry cobbler----easy & very good!!!

INGREDIENTS
1 egg, beaten
1/2 cup sugar
1/2 cup milk
2 tablespoons vegetable oil
1 cup all-purpose flour
2 1/4 teaspoons baking powder
1 (21 ounce) can apple pie filling
1 (21 ounce) can cherry pie filling
1 tablespoon lemon juice
1 teaspoon vanilla extract
TOPPING:
1/3 cup packed brown sugar
3 tablespoons all-purpose flour
1 teaspoon ground cinnamon
2 tablespoons butter, softened


DIRECTIONS
In a bowl, combine first four ingredients. Combine flour and baking powder; add to egg mixture and blend well.
Pour into a greased 13-in. x 9-in. x 2-in. baking pan. Combine pie fillings, lemon juice and vanilla; spoon over batter.
For topping, combine all ingredients; sprinkle over filling. Bake at 350 degrees F for 40-45 minutes or until bubbly and cake tests done. If necessary, cover edges with foil to prevent over-browning.

Brown sugar pie--- old recipe given to me from my grandma.

INGREDIENTS
6 tablespoons all-purpose flour
2 cups packed brown sugar
1 1/2 cups evaporated milk
4 tablespoons butter
1/2 teaspoon salt
1 teaspoon vanilla extract


DIRECTIONS
Preheat oven to 400 degrees F (200 degrees C).
In a saucepan, combine flour and sugar. Stir in milk, butter, salt and vanilla. Cook, stirring constantly, until mixture comes to a boil. Pour into an unbaked pie shell.
Bake at 400 degrees F (200 degrees C) for 5 minutes. Reduce heat to 350 degrees F (175 degrees C) and continue baking for 25 minutes.

Buttermilk raisin pie----- Yummy!!!!

INGREDIENTS
1 1/2 cups sugar
6 tablespoons cornstarch
1/4 teaspoon salt
3 egg yolks
3 cups buttermilk
3/4 cup raisins
3 tablespoons lemon juice
1 tablespoon butter or margarine
1 teaspoon vanilla extract
1 (9 inch) pastry shell, baked
MERINGUE:
3 egg whites
1/4 teaspoon cream of tartar
6 tablespoons sugar


DIRECTIONS
In a saucepan, combine sugar, cornstarch and salt. Beat egg yolks and buttermilk; stir into the sugar mixture until smooth. Add raisins and lemon juice; cook and stir over medium heat until mixture comes to a gentle boil. Cook and stir 2 minutes longer. Remove from the heat; stir in butter and vanilla. Pour into pie shell.
For meringue, beat egg whites and cream of tartar in a mixing bowl until soft peaks form. Gradually add sugar, beating until stiff peaks form. Spread over hot filling and seal to the edges. Bake at 350 degrees F for 12-15 minutes or until lightly browned. Store in the refrigerator.

Baked lemon pudding

INGREDIENTS
1/4 teaspoon baking powder
1/8 teaspoon salt
2 eggs, separated
1 cup milk
3 tablespoons lemon juice
2 tablespoons butter or margarine, melted
1 1/2 teaspoons grated lemon peel
confectioners' sugar


DIRECTIONS
In a mixing bowl, combine 1/3 cup sugar, flour, baking powder and salt. In another mixing bowl, beat egg yolks; add milk, lemon juice, butter and lemon peel. Add to the dry ingredients; mix well. Beat egg whites until soft peaks form; gradually add remaining sugar, beating until stiff peaks form. Fold into lemon mixture.
Pour into a lightly greased 1-1/2-qt. baking dish. Place in a large baking pan. Add 1 in. of hot water to larger pan. Bake, uncovered, at 350 degrees F for 45-50 minutes or until lightly browned. Serve warm or chilled. Dust with confectioners' sugar if desired.
