There is a great crockpot cook book. It is called the Fix-It and Forget-It Cookbook. It is like my crockpot bible! It has recipes for everything. Give it a try.
EDIT: I did this one last night, and it was amazing!
Taco Soup with Black Beans
1 lb ground beef, browned and drained
28-oz can crushed tomatoes
15 1/4-oz can corn, undrained
15-oz can black beans, undrained
15 1/2-oz can red kidney beans, undrained
1 envelope dry Hidden Valley Ranch Dressing Mix
1 envelope dry taco seasoning
1 small onion, chopped
Combine all ingredients, cover, and cook on low 4-6 hours.
Serve with shredded cheese, sour cream, and tortilla or corn chips.
It is so great. It tasted like taco flavored chili. I highly recommend it. I got it from the book I mentioned above.

1 lb ground beef (i usually use more than a 1lb)
1 large onion, chopped
1 (1 ounce) package hidden valley ranch dressing mix
1 (1 ounce) package taco seasoning mix
1 (16 ounce) can chick peas (you can use pinto beans if you like them more)
1 (16 ounce) can chili beans (hot or regular)
1 (16 ounce) can whole kernel corn (i use 2 cans)
1 (8 ounce) can diced Rotel
1 (8 ounce) can diced tomatoes (any flavor)
Brown meat and onions and drain.
Mix ranch dressing and taco seasoning into meat.
Open all the cans of veggies and dump them in (do not drain cans)
I let this simmer in the crock pot all day. Its wonderful
I always set out tortilla chips, sour cream, and shredded cheese for those who like it on there soup.
I serve this every Christmas Eve, with a awesome taco dip (if you want the recipe let me know) and sandwiches.

I am giving up a FAMILY SECRET, Christmas Eve Tradition..so don't tell the EX-Mom in Law, OK?
Every Christmas Eve since MY side always had the BIG day, for the kids, etc., we had dinner at their house and it was always this...NOW I am making it for a regular supper since I don't get to go there anymore and my kids LOVE it!!! AND INEXPENSIVE TOO!!
Not Hot Chili
Ingredients:
Crock Pot
1 lb ground beef
salt to taste
½ tsp garlic powder
1 tsp minced onions
2 cans pork and beans
2 cans tomato soup
1 tsp chili powder
Directions:
1 Crumble and brown ground beef in large frying pan. Add salt, garlic powder and minced onion. Transfer browned ground beef after draining to crock pot.
2 Add pork and beans, tomato soup and chili powder. Mix thoroughly. If mixture is too thick, add warm water and mix until desired consistency.
3 Cook in crock pot for several hours.
4 I usually double the ground beef and double or triple the pork and beans and tomato soup for a large crowd dinner.
May be served with a green salad, and rolls or garlic toast!!
For your crowd of 15 double or triple the ingredients...

Heres a good one for dinner.
B.B.Q. Pork
Get a good size pork roast. In a small bowl mix together chili powder, sea salt and ground pepper. Rub all over roast. Thinly slice two onions, line half in bottem of crock pot. Place roast in and put remaining onions on top. Mix a bottle of bbq sauce and 1 cup of ginger ale together. Pour on top of roast. Cover and cook on high for 5 hours or until roast pulls apart with fork. Remove from pot and shrewed with two forks. Can be cooked day before and then returned to crock pot on warm. Get rolls and you have pulled pork sandwiches. Very easy and VERY yummy...

Here's a real easy one with Campbell's soup.
2 to 3 lbs of chicken (boned or boneless - your choice)
one can Campbell's Onion Soup
one can Campbell's Cream of Celery
one can Campbell's Cream of Mushroom
one can Campbell's Cream of Chicken
one can Campbell's Cheddar Cheese Soup
one tablespoon rosemary or less to liking
optional - splash of white wine
Combine soups - do not dilute - in crock pot. Add rosemary & chicken. Cook covered until chicken is tender - at least two hours.
Serve over rice.

Hi girl,
This is a good one, my husband loves it.
put a roast ,1 packet of onion soup mix,1
small can of tomatoe sauce,1 can of beer
(makes it tender) new potatoes,carrotes into
a crockpot. Cook on high for 1st half hour
then on low all after noon.
The meat will fall apart,also you will have gravy
from this that will taste verrry good.
I start mine about 1:00p.m. then it will be ready
for dinner time.

You didn't say if it was a main dish or a side, so I'll give you one of my favorites.
1 corned beef brisket with the seasoning packet
1 large quartered red onion
2 quartered potatoes (I leave the skins on)
A lot of minced garlic
A handful of bay leaves
Small handful of black peppercorns
Celery or carrots if you want
4-6 cups of water
1 beer
Toss it all in and cook on high for 7-9 hours. I always start mine bright and early in the morning...around 6 a.m.

Merry Xmas Eve to you also...yes you may have a star for Christmas ..My plans are to spend the holidays with my family i`ve not yet opened any presents but we do to have the tradition of opening one present on Christmas eve and the rest on Christmas morning . Merry Xmas
