How long would it take to do a 16lb turkey? We've had great success with ribs, chicken, and salmon but have never done something this size.

Every Thanksgiving! It takes longer than ribs, chicken, and salmon though. I do not rotate it like the chef said and it turns out perfect every year. Main things are to remember to add more water as it runs down. Plus, charcoal and wood chunks. Soak the wood chunks in water before putting them on top of the charcoal. This will slow the burning process down. As soon as you cannot see anymore smoke coming out, add more chunks. The smoke is what makes the flavor soooo amazing!

Yes,

It is better if you debone the meat.
this will make it easier to penetrate the meat.
All so I would make sure the turkey has been out of the fridge for one hour.
you will have to rotate the meat also because of the size.

We did years ago but the bird was so big that it took hours and we even had to get up in the middle of the night to refuel the fire. It was the most yummy turkey though.

It took a few hours, but it was so-oo-ooo good! Start off small - you can buy a frozen turkey breast, thaw it and smoke that. I'd suggest nothing over eight pounds...
