With the Office Administration Degree, I have the choice of being an Administrative Assistant or Executive Assistant.... (Basically a professional Secretary) Is there any interest that the Peace Corps would have in me, because I haven't noticed this degree in any of their fields of interest.

You might talk to a recruiter. If you could teach your skills to high school students in a developing country, you might have a chance.

In one sense the Peace Corps is like an employment agency. Developing countries ask them for people with certain skills. The Peace Corps looks through its applicants to see if anyone has those skills.

To take an exaggerated example, if you were the finest glass-blower (butcher, baker, candle-stick maker . . .) in the world, and could teach your craft better than any other, but no country asked them for a glass-blowing teacher, you would not get an invitation.

If, on the other hand, you were a competent, reliable but hardly stellar civil engineer with an emphasis on low-tech water and sewage systems, and every country in the world was clamoring for same, you'd have your pick of places to go.

I don't think you need a degree to join the Peace Corps. But I'm sure they need someone to do paperwork, too! :)
