I am sure you could buy a plane if you had enough pesos. The dollar is preferred because of its stable value (at least for now).

Um, they're not. I've rented planes in Norway and Great Britain, and paid in Kroner and Pounds.
Most of the popular places to list planes for sale, like Trade-a-Plane, are US based and list prices in dollars for convenince, but their readership aren't constrained to be from the US. If you really want to pay in some other currency I'm sure it can be negotiated.

Currently the common frame of reference in the world is the US dollar, but there's more and more being done in Euros and with the almighty greenback no longer reliably stable it's likely to stay that way.

and im sure france seells airbus in their dollar
