Cook whole, unpeeled potatoes until just fork tender for potato salad - about 30 minutes.

It depends on the size of the pieces and how many potatoes you are cooking in what sized pot, but generally, at a full boil your spuds will be done in about 5-7 minutes. If you want to ensure that your spuds don't get mushy, after they have boiled about 4 minutes stick them with a fork and feel the consistency. Continue cooking and testing every minute or so until they are done to the degree you want them to be.

Boil them whole, peeled or unpeeled is fine. Till you can pierce a knife all the way through and the potato slides off the knife. If it sticks give it few more mins.

You can peel and boil the potatoes and don't worry about over boiling them. I found that even if they're really soft, once they're mashed and chilled they're still lumpy enough to make a good potato salad. Try it
