Two ideas for you:
Carmelized Sweet Potato Casserole
3 cups mashed, cooked sweet potatoes (okay to use canned)
1 cup sugar
1 stick melted butter
2 eggs, slightly beaten
1/4 cup sour cream
1 teaspoon each of vanilla and cinnamon
Topping:
1 cup brown sugar
1/3 cup flour
1 cup chopped pecans
1 stick melted butter
Mix first six ingredients in bowl and pour into casserole dish. Mix topping ingredients and sprinkle on top of potato mixture. Bake at 350 degrees for 30 minutes. Absolutely delicious! The topping carmelizes and adds just the right amount of sweetness. My daughter turns 16 this month and she's been making this dish on her own for the past two years.
For a dessert, you can't go wrong with the pecan pie recipe on the back of the Karo Syrup bottle. I use the dark syrup and a refrigerated pie crust. Use the one that doesn't come with its own little pie pan but needs to be unrolled and fitted to your own pan. Those seem to taste a little better. Also, use real vanilla extract, not the imitation, even though it will cost more for a small bottle. If you have any friends going to Mexico in the next week, have them bring you back a bottle of Mexican vanilla. It's the best!

Mashed sweet potatoes with melted marshmellows on top!
Boil the sweet potatoes until they're ready for mashing. Add a little butter, sugar, cinnamon and nutmeg and mash. Put into a casserole dish and cover them liberally with mini marshmellows.
Pop in the oven until the marshmellows melt and turn a golden brown.
You can top with a sprinkle of cinnamon - choice is up to you!

Green bean casserole ... the recipe is on the back of Cambell's cream of mushroom soup cans.
Cream cheese dip ... mix cream cheese, a teaspoon of Worcestershire sauce, some green onion tops, and some sliced chipped beef (remove the extra salt by soaking in water for a couple minutes) together and serve with crackers.

This is a very easy recipe to make and very tasty as well. Canned yams/sweet potatoes can be substituted for fresh, but the flavor is just not quite the same.
Kings Arms Tavern Sweet Potatoes
3-pounds sweet potatoes
¾-cup light brown sugar, packed divided
3-tablespoons butter
5 teaspoons cinnamon
½-teaspoon nutmeg
¼-teaspoon salt
1-cup milk
Preheat oven to 400º
Grease 1½ quart casserole
Cook sweet potatoes in boiling salted water until done; drain peel and mash them.
Stir in all the remaining ingredients except 2 tablespoons of sugar.
Turn the mixture in to prepared casserole and sprinkle with remaining sugar.
Bake at 400º for 30 minutes.

Lime Jell-O Mold

Drain pineapple saving liquid to use in Jell-O. Make Jell-O using the quick-set instructions replacing some of the cold water with the pineapple juice. Make sure gelatin is well dissolved. Place in fridge until semi-set. In a blender combine cream cheese and pineapple until well blended. Mix into semi-set Jell-O than fold in Cool Whip. Pour into a gelatin mold and refrigerate until set or over night. To serve, unmold onto a plate large enough for the mold.
