Why are round tube pans are better for Angel food cake compared to square bake pans?

Angel food cake is leavened with beaten egg whites trapping air. No baking powder, baking soda or yeast is used.

As a result, the tube in the middle allows the cooking to be even (no raw center) and gives something for the cake to grab onto and rise and maintain it's height.

Tube pans are the prefered pan for angel food cakes as they need the heat in the center of the cake.

Tube pans come in both round and square.

Bundt pans are not really good because you have a problem of getting the cake out without tearing it up.

Angel cakes can be baked in jelly roll pans, flipped and cooled 30 minutes, then rolled as for jelly rolls and after cooling completely.
