Tonight is Jambalaya. Some chicken, sausage, rice, and seasoning and dinner will be ready in about 25 minutes. French bread on the side.

I'm making stuffed green peppers, fried corn and stuffing. I know that's two "stuffs" in one meal but it sounds good! My green pepper recipe is one that's been in the family forever, basically ground beef that's seasoned up a bit, with some white rice added in. I fill up the green peppers and surround them with diced tomatoes and tomato sauce. Bake for about thirty minutes or until done in the middles.
The fried corn is a little harder but well worth it. I use fresh corn on the cob and cut off the kernels, running my knife down the cobs to get the juice. Get some bacon grease melting in a medium frying pan and add diced onion. Once the onion gets close to translucent, add the corn and season with salt, pepper and garlic powder. Cover and cook for about fifteen minutes, stirring frequently, until corn is soft and thoroughly cooked. Yum-oh!
