Our typically weekly menu goes like this

pizza
hamburgers
sub sandwiches
spaghetti
burrito and so on

I'm really getting sick of these meals, so I want to try something new. Nothing exotic or hard to make, something you could make with chicken, beef, or ground turkey. Nothing simple or takes a long time to make, nothing fatty, we're lean cookers but not vegetable eaters. Thanks advance!!

use Panko bread crumbs with chicken!
Take 5 boneless chicken breasts and clean them up.
Then spread about a half cup of flour onto a plate and season it. I used Emeril's Essence, but you can use anything. 2 eggs and then about a cup and a half of the Panko bread crumbs mixed with Parmesan cheese. ( I assume you know to put the flour, eggs and panko crumsb in 3 separate dishes :)
Place a cooling rack onto a baking sheet and spray it with Pam or any cooking spray. Then place each piece of breaded chicken on the rack.
Cook in the oven at 375 degrees for 20-25 minutes or until the tops are slightly browned.

You can take them out and add some pasta sauce and shredded mozzarella. Put it back in the oven and broil it just until the cheese melts. Serve over a bed of pasta and you have EASY chicken parmesan!!

One thing that I found that makes clean up easier is to use paper plates for the flour and the bread crumbs....then you can just toss them in the garbage!!!

Quick Cube Steaks

6 Cube Steaks
2 tbs. oil
Two or three cans reduced fat cream of mushroom soup
1 1/2 cans water

Heat oil in large skillet and add cube steaks. Brown on both sides. Remove steaks and drain on paper towels. Wipe skillet clean with paper towel. Add mushroom soup and water and stir until well mixed. Place cube steaks back in skillet, cover, and let simmer for about 30 min., stirring occassionally. Add more water if mixture becomes too thick (this will be your gravy). Serve with mashed potatoes and a vegetable.


I used to make cube steaks and homemade milk gravy, but this is so much faster.

Do Ahead Ground Chicken Lasagna

1 pound ground chicken
1 can (16 ounces) tomatoes
1 can (6 ounces) tomato paste
1 1/2 tablespoons chopped parsley, divided use
1 1/2 teaspoons salt, divided use
1 teaspoon basil
6 ounces lasagna noodles
1 carton (16 ounces) low fat, small curd cottage cheese
1 large egg, beaten
1/4 teaspoon pepper
6 ounces skim milk mozzarella cheese
1/4 cup grated Parmesan cheese

1. Heat frypan over medium high temperature. Add ground chicken and brown, stirring, about 6 minutes.
2. Pour tomatoes, tomato paste, 1/2 tablespoon of the parsley into a blender or food processor; process about 1 minute. Stir tomato mixture into ground chicken and simmer over low temperature about 20 minutes.
3. In medium bowl, mix together remaining 1 tablespoon parsley, remaining 1/2 teaspoon salt, cottage cheese, egg and pepper.
4. In bottom of 2-quart shallow baking dish, spoon a little of ground chicken mixture. Then layer noodles (uncooked), cottage cheese mixture, mozzarella cheese, Parmesan cheese and ground chicken mixture. Cover and let sit in refrigerator overnight.
5. Bake in 375°F. oven for 30 minutes. Let stand about 10 minutes and cut into squares.

Makes 6 servings.

Looks like you want something easy, based on your typical week.

I'm having pita pockets tonight. Very easy. You can put anything in it; make them like sandwiches if you like.

Or maybe get some chicken breasts, slice into strips (or buy presliced strips). Dip in bread crumbs, seasoned how you like it. Bake in oven. Prepared and cooked under 30 min.

Brown ground turkey. Add can of diced potatoes and heat. Open can refrigerated croissants, separate. Place turkey mixture in center of croissant with cheese. Roll up making sure filling is covered completely. Bake according to croissant directions.

Shredded chicken on tortillas with salsa or whatever fixings you want.(omit salsa and use sauted onions and bell peppers) You can season your chicken with fajita seasoning. many options here...

Chicken Casserole

Chicken cut up, some kind of noodles(whatever your favorite is), gravy or a cream of something soup, you can also add veggis if you want to.....I just add a few cans of whatever is on hand at the time.....you can bake it off in the oven and put some crushed chips on top or you can just eat it out of the pot.......really easy and is great for leftovers!!

Tacos are fast and easy, try more salads like steak salad or chicken salad. Tuna noodle casserole, or chicken noodle soup. Get your crock pot out and the possibilities are endless. Good Luck!

Super simple thing I do... I mix cream of mushroom with cream of chicken and a little milk in a baking dish and put a few chicken breasts in... salt, pepper, garlic power and tony's. Bake!!!!

Serves well over rice! Love it. :o)
