Braised Celery with Mushrooms

1 bunch celery, scrubbed
1 c chicken stock
1/4 lb mushrooms
4 TBS butter
2 TBS flour
1/2 c milk
2 TBS cheddar

Put stock in saucepan and bring to boil. Add celery and cook 20-25 min. Drain and put in oven-proof dish. Reserve stock. Slice mushrooms. Saute in half the butter. Drain well. Scatter mushrooms over celery. Melt remaining butter, stir in flour, cook gently 2-3 min. Add milk and 1/2 c stock. Bring to boil. simmer 2-3 min. Pour sauce over veggies and sprinkle with cheese. Broil until bubbly.

Green Rice

3 cups cooked rice
2 boxes (10 oz each) cooked broccoli – chopped
Mix together in a large bowl

1 stick butter
½ cup onion, chopped
½ cup celery, diced
1 jar cheez whiz (8 oz)
1 can cream of mushroom soup

Melt butter in skillet. Add vegetables and cook until they are tender. Add cheez whiz and soup and stir until smooth. Pour over rice and broccoli and mix well. Pour into a sprayed casserole dish and bake at 350 until heated through.

Vegetable Florets with Cheddar Sauce

2 cups cauliflower florets
2 cups broccoli florets
1/3 cup water
1 tablespoon margarine or butter
1 tablespoon all-purpose flour
1/2 cup NESTLÉ® CARNATION® Evaporated Milk
1/2 cup shredded cheddar cheese
1 (4-ounce) can sliced mushrooms, drained

1. Place cauliflower, broccoli and water in large saucepan. Bring to a boil. Reduce heat to low; cover. Cook for 12 to 15 minutes or until vegetables are crisp-tender. Drain; remove vegetables from saucepan.
2. Melt margarine in same saucepan over medium heat. Stir in flour. Add evaporated milk; cook, stirring constantly, until mixture comes to a boil and is thickened. Add cheese; stir until melted. Stir in mushrooms; remove from heat. Stir in cauliflower and broccoli.

Makes 4 servings.

My fav is green bean casserole only instead of the cream of mushroom soup ,I use cheddar cheese soup and my niece and nephew love it . they dont like mushrooms . good luck and god bless.
