Nobody can tell you how to set the brightness/contrast/color. These are all variable set-to-set and you have to adjust them when you get the TV in your home.

I will advise you to turn down the brightness & contrast as these are set to 'torch mode' at the factory in case the TV is put on the shelf at the store for a demo.

Get a copy of Avia or Digital Video Essentials DVD. These disks have tutorials on how to adjust the TV settings.

Or you can hire an "ISF Calibrationist" to come to your house and calibrate your set.

REMOTES:

I have fallen in love with the Harmony-Logitech remotes. They are 'activity' based so with 1 button you can power everything up, switch to DVD, etc. They hook up to your computer to program.

I like the 688 model because it has dedicated keys for a DVR. It also controls the volume on my Samsung. My other remotes you have to hit volume up multiple times to raise or lower the volume. The 688 'knows' my TV and just holding the volume up/down buttons works like the original remote.
