I love roasted garlic myself but is there a way for me to keep it in the fridge to use later and have it stay good for more than a few days. I know that they package roasted garlic in oil in the stores, can I do the same at home to extend the shelf life? Thanks in advance for the help.

You may roast garlic and then store covered in oil under refrigeraion for a very long time, however given roasted garlic stored in oil is a heat processed food stored in a oxygen free enviroment (anaerobic) the health department warns of potential botulism contamination. As long as you cool the roasted garlic down quuickly and store under refrigeration. Serving your roasted garlic within 7 days and not allowing it to be between the temperature of roughly 40 and 140 f for more than four hours at any time after roasting/before serving will eliminate any reasonable concern. It will last much longer than that, but don't tell them i told you so.

In my home roasted garlic lasts 30 minutes then it's gone! I love it warm right out of the oven! You can roast several bulbs and keep it in the frige for about a week. If you love it like I do just make it every couple of days. I just take the time and roast it when I want it, It is best fresh out of the oven or off of the BBQ grill. If I'm using a large amount of roasted garlic for a catering job or a party like Thanksgiving a bake of a lot and save the leftovers for other dishes or for use later. I wouldn't freeze it though. The ice crystals break down the texture and change the flavor in the freezer.

"I like to roast 3 or 4 heads of garlic at a time in lots of olive oil. When they are done, I separate the garlic from the oil and clean the cloves. Then I freeze each separately. it's great having those little gems available instantly and the garlic oil is wonderful to have on hand."

"i remember a while back i roasted a couple of heads to make a roasted garlic aioli, then i vaccuum packed some of the remaining roasted garlic cloves and stored in the fridge for a couple weeks.... then i spotted the vaccum packing was inflated, surely botulism was thriving inside, as we know, this an anaerobic bacteria requiring no oxygen to exist and not only dangerous but can even be deadly!! so, i would definitely recommend against storing it more than a few days in the fridge

Can we store it in the fridge without oil on it? I don t use any oil for health reasons, but would like to roast garlic and keep in fridge for a few days. I saw that there are some kind of spores that can kill you?

If you have leftovers, squeeze out the pulp into a small dish, cover with olive oil, and store, tightly covered, in the refrigerator for up to 1 month.

probably a week or so, airtight.

I buy the jar of it, already minced and roasted, and it keeps for weeks. But it's been canned, so who knows.
