Onions, mushrooms, green onion, tomato, spinach, broccoli, green peppers.......Personally, I would go with onion and tomato (remove the seeds so it doesn't get watery). Perhaps red onion instead of regular. It'd be like a ham and cheese sandwich in an omelet. Now you've got me hungry!

I'd include onions, either spring onions, sliced thinly acrossways until you get to the tough dark green part, or small diced regular cooking onion - about 1/4 small onion per two eggs. Then maybe mushrooms, or green/red peppers - even hot peppers if you like them, all stir-fried until still crisp, but cooked. If you like asparagus, you could either use blanched or slightly stir-fried chopped asparagus, breaking each stalk first at its natural break point, and using the tender end. From there on in, depends greatly on your taste. Some people might enjoy a small amount of chopped fresh tomato, which I would not put in until the top of the omelet was almost done, otherwise the tomato would become too watery. Adventure ... cooking is about combining foods that you enjoy. Soon you will start to think about various combinations, and check them out. Some of my finest dining experiences have emerged out of my own kitchen. That way it is easier to make choices about what you really want to cook today. Mostly, have fun!

I would only add some spring onions, to the omelet, and have it on toast, with baked bean that has a diced onion added.
Instead of the beans you could use mushrooms, tomatoes corn etc.

i always have ham, cheese, bell pepper,,onion and mushrooms in my omeletes. i usually mix the veggies in with the egg. and then I serve it with salsa on top!
