my brownies are in the oven right now and i wanted to make some caramel topping but i don't have condensed milk (the recipe asks for it), can i make it without condensed milk or shouuld i make some other topping? should i add the topping on the brownies the minute i take them out of the oven or should they cool?
Open for suggestions!!

Caramel Sauce
1½ cups sugar
1/3 cup water
1¼ to 1½ cups heavy cream
½ vanilla bean or ½ tsp pure vanilla extract
Mix the water and sugar in a large heavy-bottomed saucepan. Cover and cook over low heat until the sugar dissolves. Increase the heat and boil uncovered until the sugar turns a medium brown, about 5 to 7 minutes, stirring occasionally with a wooden spoon. Watch it carefully at the end, as it will go from caramel to burnt very quickly. Stand back to avoid splattering, and gradually add the cream and the seeds scraped from the vanilla bean (or vanilla extract). Simmer until the caramel dissolves and the sauce is smooth and thick, about 2 minutes. Serve warm, or add another 1/4 cup of heavy cream and serve room temperature.

Let them cool. If they're moist fudge brownies, I especially like powdered sugar sprinkled on them. You can always mix powdered sugar and cream cheese together for a really rich tasty topping. I'm getting hungry. Oh, you can mix powdered milk, using half the water, to substitute for your condensed milk.

on "recipezaar.com" you can find substitutions. But I advise that the less ingredients a recipe contains, the less possibility there is of finding suitable subs that do not change it entirely.
A roommate of mine once made a rich chocolate brownie-thick sort of cake and while it was hot she poked holes in it and poured on a hot, homemade chocolate fudge.
Absolutely decadent chocolatey heaven =D
*A topping that requires you to spread it should be added once brownies are cool, but if you do like my roommate did or where its crumble or sprinkle on its okay, and better because the topping will stick on the heat. Allow to cool before cutting.
You can cool the pan on your iron stove burners under a window.

I wouldn't try making it without the condensed milk, that could spell disaster. My mom always sprinkled powdered sugar on brownies, it was the best and a super easy solution!

Try this one.
3 tablespoons butter or margarine
3 tablespoons cocoa
1 tablespoon light corn syrup
1/2 teaspoon vanilla
1 cup powdered sugar
1-2 teaspoon milk
In a small mixer bowl, beat butter, cocoa, corn syrup and vanilla until blended.
Add powdered sugar and milk; beat until spreading consistency.
Note: This makes enough for an 8x8" pan; double it for a 9x13" pan.

Well, toppings are up to you. I would suggest vanilla ice cream and some crushed nuts.
Brownies should be eaten when warm not hot out of the oven. So give it sometime to cool off some.

peanut butter man!!!!!!!!! best brownie topping...caramel w/o milk might be a lil too sweet and harden too fast.
