That would depend on what ingredients you do have to work with. The main thing to remember is that it is the seasoning that is really important.
Let's see if any of these ideas help you
1. Use a powdered sour mix, shape into loaf and top with ketchup with a dab of brown sugar.
2. Use a can of cream soup. Mix 3/4 of the can into the meat. Shape. Mix the remaining 1/4 can with 1/4 can of milk (water if you don't have milk) and pour that on top of the meat. Bake as normal
3. Add a half jar of spaghetti sauce and follow instructions for #2 above.
4. Use a stuffing mix, like stove top, to mix in the meat, and top the meat with a brown gravy.
Basically use your imagination and what you have. Think outside the box. Help these have helped and that you realize that no recipe is set in stone, and you can use whatever you have handy and still have a good meal. Here's an easy recipe:
1 1/2 lbs ground beef (ground shoulder roast is good)
1 slice bread, broken or chopped finely
1 whole fresh egg
1 small vidalia onions or type sweet onion, finely chopped
1 teaspoon table salt
1/4 teaspoon black pepper
4 tablespoons ketchup
1/2-2/3 cup sweet milk or half-and-half
Sauce
4 tablespoons apple cider vinegar
2-4 tablespoons dark brown sugar, packed firm (to taste)
1/2 cup ketchup
Reduced Carbohydrates Main Dish
Meatloaf: Combine meat loaf ingredients and place into a loaf baking dish.
Smooth out top.
Sauce: Combine sauce ingredients and pour on top and sides of meatloaf.
Bake@ 350 degrees Fahrenheit about 1 hour to 1 hour 15 minutes or until done.

Mama's Cheesy Meatloaf
1 lb. ground chuck
1 egg, beaten
2 tbls. worcestershire sauce
1 cup ketchup
1/2 tsp. onion salt
3/4 stack Town House Crackers, crushed
2 cups grated cheese (I like sharp)
Mix all ingredients, except cheese. Press meat out onto plastic wrap about 1/2 inch thick. Sprinkle cheese over meat evenly. Roll up the meatloaf, jelly roll style. Tuck in the ends, and secure with LOTS of toothpicks. Bake at 350 degrees for about 45 min.
Sauce:
1 cup ketchup
1/2 cup mustard
1/2 cup brown sugar
Combine, and heat thoroughly. About 15 min. or 20 min. before meatloaf is done, pour on some of the sauce, and finish baking. Keep the rest to pour onto the meatloaf slices at the table.

It's hard to say not knowing what ingredients you have, but take your ground meat (beef, chicken, turkey, whatever)
and add at least 1 egg, some salt, whatever spices you have in your cabinet that you like (I love poultry seasoning in turkey meatloaf) and add some filler material like oatmeal or bread crumbs if you need to make it stretch. You can either shape it into a loaf and bake it at 375 until it is done all the way through, or you can fry it in patties like you would a burger (this is fast and easy if you don't have a lot of time to wait for it to bake) For the sauce, mix ketchup with soy or broth, and add more of the same seasonings like you used in the meat.
It's pretty hard to mess up meatloaf, so just trust yourself a little. You'll be fine.

3 things are must haves for meatloaf;
ground meat
some sort of crumb, bread crumb, cracker crumb, oatmeal, smashed chips(ive used doritos even)
Eggs to bind it all together.
I usually use 2 lbs gr meat, about 1 c of crumbs, 2 eggs. I also add any leftover veggies chopped finely, maybe some onion and a little tomato(juice, sauce or paste) . Mix this together with herbs, seasonings and spices of my choice. Mold into a loaf or put in loaf pan.
Pour some sauce on top (marinara, tm sauce, ketchup, bbq)
and bake.
You can do any type, mexican, italian, bbq ect. Just use flavors that you love.

All you need for meatloaf is, ground beef, bread crumbs, 1 egg, and ketchup(whatever seasonings you want.) I usually just use some garlic powder and just some salt and pepper.
Mix the breadcrumbs, ground beef and the egg together.(you could also add cheese if you wanted.) Cook, in the last 10 minutes add kectchup to the top. Hope this is helpful!

My mother makes awesome meatloaf, by taking hamburger, oatmeal, and barbecue sauce mixing it together, and baking it, than after its almost done, pours more barbecue sauce on the top, its very good!
