believe it or not the best method for peeling potatoes is after they are boiled or baked. Let the potatoes cool about 30 minutes before handling them and just peel the skin using a table or butter knife. Its real easy and super fast! I used to have to peel over 100 pounds a day for a restaurant I worked at and I could do 100 pounds in about 30 minutes. The best thing is that they don't turn that nasty brown color and most of the time you're peeling them to cook them any way so just cook then peel. and all you do is scrape the potato and you're left with a naked potato without taking off flesh with the skin.

Potato peeler is the best. The straight old-fashioned type, not those fancy U shaped ones.
Also, don't hold the potato in the air.
It's too much effort... one hand is peeling and pushing the potato down, while the other hand is trying to push up and hold the potato still. Instead, rest the tip of the potato on the counter or sink, hold the potato at an angle (45 degrees) and peel away.
paring knives are okay, but it's too much wastage when you're going fast.
Potato peelers cut just the right depth and pretty straight forward. You can go as fast as you like and not worry about cutting your fingers or the depth of the cut.
If you want to get fancy, you can try an apple peeler. The type that clamps the apples on the end and you crank a handle to peel the apple. I would imagine it would work for potatoes too. Just not as fast, but is a neat gadget to mess around with.

Here's what nobody else apparently knows ;old fashioned ,el cheapo , low tech potato peelers cut in BOTH directions.
If you loosely hold the potato peeler so that the blade is free to move about in all aspects then all you have to do is" scrub" the potato in a motion similar to that of brushing your teeth and the skin will come right off.
The key is to have a loose grip on the peeler and not restrict the blade's movement

"Get someone else to do it" is really my favorite method.
But assuming I'm peeling potatoes manually---not using a mechanized device---I always start at the wide end.
Hold the potato by the it's narrowest end, and peel the wide end, using a hand-held peeler. Then flip the potato around, and hold the wide end so you can peel the narrow end. It's easier to get a grip on the wide end, once it's been peeled.

a potato peeler for a starter
you can use a hard brush for new potaoes or if the skin is too thin
depends what you need the potatoes for, if i need them for a salad, or mash, i cut them in halves or quarters with the skin, boil/ steam them and then take each one with a fork and peel with my other hand while still warm, but not too hot.

the best way is with a sharp paring knife (flat sided knife) a steak or ragged edge knife SUCKS! and just cut off the layer of skin not half the potato :D ...Good luck!

ok, i hate peeling potatos so here's what I do, I microwave my taters (6 big ones) in the nuker for 10 mins, split them open in half and scoop them out. I either use the pulp for mashed taters or hash browns. THEN, I keep the skins for potato skins for another meal. Pretty good idea huh?!

if you go to one of big kitchen shops you can get an all metal one which are very good only costs £1. they last for ages.
