Spinach, Artichoke and Cheese Dip

Delicious and perfect for those cravings we all have. When you just have to have spinach and artichoke dip, make this and all will be well

1/4 cup olive oil
2 tablespoons butter
3/4 cup onions, diced
1 1/2 tablespoons garlic, minced
1/2 cup flour
1 1/2 cups chicken stock
1 1/2 cups heavy cream
3/4 cup parmesan cheese, grated
2 tablespoons chicken bouillon, crumbled
1 1/2 tablespoons lemon juice
1 teaspoon sugar
3/4 cup sour cream
12 ounces frozen spinach, defrosted and drained
6 ounces artichoke bottoms, canned
1 cup monterey jack cheese, grated
3/4 teaspoon Tabasco sauce

In a large saucepan, warm the olive oil and butter over medium heat.
When the butter has melted, add onion and cook until wilted. (4 minutes).
Add the garlic and cook 2 minutes longer, stirring occasionally.
Sprinkle flour over the onion mixture.
Cook, stirring constantly, until mixture turns golden brown in color. (12 minutes).
While whisking, slowly pour chicken broth into onion-flour mixture until it is smoothly incorporated.
When the mixture begins to simmer, stir in the cream.
Allow mixture to simmer and remove from the heat.
Add the Parmesan, bouillon, lemon juice and sugar and stir until thoroughly blended.
Add the sour cream, spinach and artichoke hearts, Monterey Jack cheese and Tabasco sauce and stir until all ingredients are thoroughly combined.
Transfer to a warm serving bowl and serve immediately with chips or bread cubes.

Tyson chicken nuggets w/dipping sauce
-use duck sauce or ketchup

Tyson Buffalo nuggests w/blue cheese dipping sauce
-use Ken's bluecheese salad dressing

Frozen Taquitos w/honey-mustard dipping sauce...make the honey mustard sauce with mayo, add regular mustard and honey in equal parts. Stir.

All the above bakes in the oven around the same temp and you don't really have to do anything to it. You can set-up the sauces in small containers the day before and put them in the middle of the platter as items come out of the oven. All are good cold or hot, so no need to stress.

For cold stuff you can make ahead, get melon balls and put some fruite-flavored yogurt out as dipping sauce along with toothe picks.

My favorite to bring or make for parties is this:

But a variety of bagels, pull them apart and cut into halves or quarters.
Mix cream cheese and garlic powder (not too much).
This is the base for several varieties of toppings.
Add bacon bits or fresh made and crumbled, chopped olives, chives, basil, a little cayenne to spice it up.
Spread the cream cheese on your bagels and then you can add these toppings:
Fresh sliced tomato, avocado, prosciutto, sliced olives......

Serve on a nice bed of lettuce or fresh spinach, or arrange in a circular pattern and put fresh grapes or berries in the center.

The list is endless, mix and match to your liking and have fun with it.

If you are holding your own party there is no such thing as easy finger food, as food prep is the last thing you want to do when you are getting ready for a party.
The best thing to do is make stuff the day before then whip it out on the night. Buy vol-a-vent cases and fill them with mascarpone and sweet chilli sauce, chicken and mushroom, etc. cheese and biscuits - loads of them with grapes.
Melt a big pot of chocolate with lots of cream and chop up fruit for a fondue. add marshmallows and donuts.
French baguettes with pates. etc .....

take fresh asparagus, cut the bottoms off and use a peeler on the bottom inch to take off the stringy skin. Blanch (put in boiling water) it for about 1 1/2 - 2 minutes and then immediately immerse in ice water to stop it from cooking and keep it crisp. Make a horseradish mayo mixture....you cam make it to taste, but you definitely want to be able to taste the horseradish...I personally like a lot of horseradish. Cut each asparagus stalk in half, dip it very liberally in the horseradish mayo and wrap it in a slice of rare (or cooked to you preference) deli roast beef.

Every time I make these, they are one of the first things to go.

if a passion party is what it sounds like serve lots of food associated with peoples passions- foods that are suspected aphrodesiacs (sp?). Many fruits fall into this catagory, strawberries, apples, quince, pears, chocolate/maybe a chocolate & fruit fondu, oysters, seafoods of all sorts, sweet spices, and whatever food you feel passionate about, and don't forget alcohol, preferably champaigne.

Take cream cheese, salsa, and chppped black olives. Mix them to the consistency of your choice. (let the cream cheese soften first) Then spread the mixture as thick or thin as you please onto a tortilla. Roll it up and put it in the fridge. After it's chilled bring it out, cut it into rolls, and insert toothpicks in the sides of the rolls. They are always a hit! Yum.
