Hey Ya'll.......this is also my suggested recipe for Ham and Red-Eye Gray. Do not forget to make your side dishes of grits,eggs and hot homemade biscuits.
Ham with Red-Eye Gravy
*1 pound (about 4 to 6 slices) of uncooked country ham (ham that's dry rubbed cured)
*2 teaspoon brown sugar
*1/2 cup to 3/4 cup strongly brewed coffee
*1/2 hot water
*Black pepper to taste
Cut a few gashes around the fatted edges of the ham slices to keep it from curling up. Lightly grease a cast iron skillet and saute ham turning until browned. Take out the ham and cover to keep warm. In skillet where the drippings are add the brown sugar,coffee,water.Add black pepper to taste. Bring to a boil until desired thickness. You can put the slices back in the sklillet with gravy or serve gravy over ham.
Do not forget the hot biscuits,eggs and grits:)

Fry some ham, save the drippings, and add a strong shot of esspresso or instant coffee and flour to desired thickness. theres no exact recipe, so you will have to find the flavor balance you like.

the true southern way is put sugar on both sides of the ham and then fry the ham and then when it is a slight bit sticky then add coffee . wallah .

******GRAMMIE’S RED EYE GRAVY
Optional: ham, fat back, bacon or hog jowl
1/2 c. coffee
Fry ham (or other meat) slowly, making sure drippings (grease) does not burn. Remove drippings while very hot. Pour in bowl, pour coffee in frying pan, rotate pan and very quickly pour into drippings.
