Sorry can't say where to stay as I lived there on Lantau island in Discolvery Bay.
Weather in January can be a bit cold - it does get down to 4 degrees although not for too long.
The Peak is lovely for views over the island, Stanley market is good for a cheap bargain, as is the night market in Kowloon.
Peng Chau is great for seeing things distinctly chinese style (we used to catch the ferry over there on the weekend & there are a couple of okay places to eat).
Central is good for more expensive shopping & Wan Chai for eateries.
This was all 7 years ago though.

For weather in January, it should be anywhere between 8 to 20 degrees Celsius. It's mostly rainy and quite chilly there, with no snow presence (although it's considered winter there).
In Hong Kong, many places for you to see and do there, you can go to night markets like Lady Street and Temple Street.
Go to Fa Yuen Street (Garden Street) in Mongkok for buying and/or visiting flower shops, Yuen Po Street for live bird chirping in the morning and the popular bird garden to see more birds and if you are lucky, you can see them fighting their "singing" skills. There are also lots of museums for you to visit, like HK Heritage Museum, Hong Kong Discovery Centre, HK police museum, Flagstaff House Museum of teaware, HK maritime museum in Murray House etc. The Avenue of the Stars and the Peak are the few romantic places in Hong Kong you can visit, especially during the night time.
For hotel, lots of places for you to stay. For me, I always visit the Novotel Century Harbourview Hotel (508 Queen's Road West, Western District), which is located at the western part of HK Island, which has nice harbourview. It's a 10 minutes bus ride to Central MTR station and you can take the nostalgic electric tram that dates back from 1904. It's only cost you HK$2 if the price doesnt rise and take you 20-30 minutes to reach Central MTR Station. Quite scenic thou if you are not press for time. (quite romantic especially at night).
The other hotel is the Regal Kowloon Hotel (72, Mody Road), which is located on another side in Kowloon, which i personally like it. It's located near the Tsim Sha Tsui East KCR station and HK Science & History Museum is also nearby. Tsim Sha Tsui MTR Station is just a 5 minutes walk.

Any market and The Peak - Market for shopping, The Peak for sightseeing. There's a Bubba Gump restaurant at The Peak I can highly recommend, and you have to take the Tram up to the peak - it's very cool. However, it needs to be a good weather day for The Peak otherwise you will see nothing - we went up twice in the end. One day was raining, and one was warm and clear and lovely! The temperature was quite reasonable in April, comfortable, not baking hot.
Beware, all reasonable-priced hotel rooms will be VERY small - we stayed at the Hotel IBIS at North Point, and it was miniscule!

Go to the Ladies Market at Mongkok, Stanly Market at HK Island. Temple St Night market at Jordan. Go to the peak for the full view of HK.
Check out the light show at Star Avenue in Tsim Sha Tsui.
Go to Nathan Rd but make sure you don't buy anything there as there are lots of Tourist trap.

i can only answer your second question since i stayed with friends in august, years ago.
see the islands.
lantau is great - see the buddha and eat in the monastery.
lamma has lovely bits too - fight your way through jungle to get to isolated lo so shing beach. like the bounty advert and you are alone!
and it was either peng chau or cheung chau that really shocked us - simple life in the extreme
obviously there's the peak
nathan road mong kwok is a real experience.
star ferries.
wonderful.
loved every minute
