Most commercial flights die down at nights. Usually the only flights coming in late at night are freight planes.
Also when you sleep you tend to drown out some noises such as planes.
When you sleep do you wake up to every car that passes by? No, because you tend to ignore those sounds.

You are asleep...but it is odd I've noticed that the airplanes that go over during the day are rather loud here live about (20 miles from Charlotte Douglas International) but during the night they aren't as noticable even though I see them fly over at about the same height.

We turn down the volume at night to keep the public happy!
Just kidding, its hard to hear anything that's seven miles in the sky. Although there are less flights at night, you are more likely to see their flashing lights. During the day you probably don't notice them since they are much harder to see. Either way its hard to hear them, unless they are taking off or landing.

It is because we are sleeping and the sleep blocks out most soft noise, the aeroplane is considered soft

There is no way to see them, so they turn off the sound.
