theres so many different kind of metals which is the best one

High Carbon Steel.....But it is extremely hard and difficult to work with.......

Some things that you should consider:

1. High carbon steel is harder than stainless steel and generally stays sharper for a longer period of time.
2. The high carbon content causes the steel to be more prone to rust, so more attention is required in terms of maintenance/lubrication.
3. While stainless steels will not stay sharp as long as high carbon ones, they are much easier to sharpen when it comes time to do so.
4. Stainless steels can rust if you don't maintain your knife properly.

There is always a trade off between the steels so I think that it really comes down to your personal preference.

If I were you I would go to a knife show ask vendors.
