Okay, I'm not 100% sure on this but...
As I understand it. It was believed that you sneezed out your soul. Blessing someone was a means to get the soul back in.
So they believed.

From a medical standpoint, when you sneeze your heart stops. So we say God Bless You so that your heart will start back up. This is originally where God Bless You all started...hope this helps you. I thought that it was very cool when I learned this and I've never forgotten it. So when someone sneezes say God Bless You instead of Bless You so that their heart will for sure start beating again.

In the dark ages, when people sneezed, they tended to die shortly after. There was no niquil or other medicine. People died of the flu all the time.
So, people believed that demons or evil spirits caused the sneeze hoping to steal youre soul as it came out. God Bless you was said to chase away the evil and extend your life.

I heard that it was said a long time ago back during the black plague because sneezing was symptom of the disease so they would say God bless you...That's just my guess...

Another idea is that it was believed that sneezing made a person vulnerable to evil spirits so you would bless them for protection.

Century's ago people believed that when you sneezed your spirit, soul, left your body and for the split second it was gone...Satan and his hoards of demons could invade the empty space and take over your body. Leaving your soul lost and your body possessed by demons.
SO GOD BLESS YOU, was a superstitious way of saving soul and body from Satan and his minions!

saying bless you came from the black plague days. people started to say bless you to anyone who sneezed because that was a symptom of the plague and the were blessing them so that they wouldn't die or so that they would go to heaven if they die.
