marinate it in equal parts of soy sauce,vinegar,garlic,and crack of pepper for 24 hours.bake it in the oven and uuuggghh!! so soft,juicy and tendor and the marinate is the best!

a whole chicken cut to 8 skinless pieces OR 8 chicken boneless breasts.
3 spoon or veg oil
2 t/s of tikka masla powder
1 t/s garlic powder
1/2 canned chopped tomato
2 spoon tomato puree
salt, papper, cumin powder
2 potato's chopped to wings
and finally 1 chopped red onion

pre-heat the oven (GAS 7) and at the main time get the whole lot into a large pan and mix it very well until you see the whole lot in a bright reddish colour
then put it in an oven pan with a small 1/2 glass of warm water and cover it with foil (that's if it doesn't have a cover)
at the main time get some plain rice ready
and chop some cucumber and add it to yogurt and salt which it can be eaten as a salad

keep checking on the chicken until it gets ready and eat this lovely meal with a glass of red wine!

My mother only had cooking skills that kept us alive yet I became a marvelous cook. Go figya!
I really like my own cooking and had no skills when I started.

CHICKEN ALA FREESUMPIN
Veggies ::
Chop onion, carrot, celery, red bell pepper, jalapeños or Chipotles, grated ginger and garlic, S&P. Sweat about 10 minutes and place aside.
Chicken Thighs ::
S & P 10 - 12 Chicken Thighs. Put 1 cup flour and S & P, 1 tsp whole cumin seeds, and 1 tsp smoked paprika into a large grocery bag. Put all thighs into bag and shake to coat with flour. Brown thighs on medium heat with olive oil about 10 minutes. Add 2 cups chicken stock, 1 cup dry R or W wine (or a can of beer), 1 tsp whole cumin seeds, 1/2 tsp thyme, 1 tsp smoked paprika and slowly simmer uncovered about 15 minutes, turning once uncovered. Add veggies, heat briefly and correct seasonings.
Serve over rice or toss with pasta. Yu

I make a crumb coating of breadcrumbs, mixed dried herbs, a chicken stock cube, bacon & tasty cheese. Blend all together and coat chicken breasts in it. Delicious!I also love chicken wings marinated in hot chilli sauce, then baked in oven till crisp.

The only way!!!

SOUTHERN FRIED CHICKEN

1 (2 - 2 1/2 lb.) frozen disjointed chicken
1 c. all purpose flour
2 c. buttermilk
1/2 tsp. salt
1/2 tsp. pepper
2 c. Crisco (enough to have fat 1 1/2" to 2" deep)

Combine flour, salt and pepper and put in paper bag. Coat chicken pieces in buttermilk, then shake in bag until well covered with seasoned flour.
Melt shortening in heavy skillet until very hot. Add chicken to pan, reduce to medium heat and cook until underside is golden brown, approximately 15 to 20 minutes. Turn and cook until other side is brown then reduce heat to low, cover and cook 10 minutes longer.

what i do is i use a non stick pan. fry it down with a little mc cornmick girlic and herb seasoning. taste so good
