Here is an "official" suggestion for optimum freshness, but if they taste good they must be good. I wouldn't worry about it. I don't think the would spoil if frozen the whole time.

Pecans can be thawed and refrozen repeatedly during the two-year freezing period without loss of flavor or texture.
Airtight containers, such as jars with lids, are best for storing pecans in the refrigerator.
Sealed plastic bags are best for storing pecans in the freezer.
In-shell pecans can be stored in a cool, dry place for six to 12 months.
After removal from cold storage, pecans will stay good for an additional two months

I'm pretty sure it is safe.
Nuts usually last around 8 months without being frozen, so freezing them should make them last a very, very long time. Nuts don't have much natural sugar in them, so any bacteria surviving the cold wouldn't have much that it could metabolize.
The main issue with storing something like that for so long would be taste. So if it still tastes good, eat the hell out of it! Just be sure to stop if you start to feel queasy!

7 years seems like a really long time. They didn't have a freezer taste to them?

no. peacans have sugars in then that metabolize after a period of time into iodine which is not save to eat too much of.
