Ok, I'm in a skills for living class, and tomorrow I have to make breakfast for 20 kids! I have about 45 whole minutes to cook, but the fastest time would be best. What's something that's good and easy to make for breakfast? Thanks so much!

You could take a few containers of yogurt (vanilla flavor), have some bowls of toppings like bananas, strawberries, blueberries, raspberries, apples, pears, - whatever fruit is in season - raisins, cranraisins, whatever dried fruit you want, some stone-ground oatmeal, pine nuts, almonds, whatever kind of nuts you want.

Put everything in bowls and have the children go through the line choosing what they want in their meal. Once all the toppings are in the bowl, then spoon on the yogurt and mix it all up. It makes a very nutritious meal.

The only time on your part is putting everything in their bowls and cutting the fruit.

I had that in a restaurant once for breakfast and it was very good. You could even have a bowl of granola for them to add to their cereal bowl. You don't need toast with it - don't need to light off the stove and try to cook eggs or bacon. I'm sure you are going to teach them whatever you are going to do - from start to finish so you can't make it ahead of time at home - unless you make up a couple of casserole dishes, and then while they are cooking you demonstrate what you plan to serve by making one in front of them.

If that's what you are planning to do, then you could make this hash brown casserole dish:

2 bags hash browns or the hash browns with bell pepper in it
1 lb bacon - diced and fried until almost crisp
1 medium onion - diced and sauteed in oil or butter just until translucent
1/4 cup dried chives or 2 stalks green onions - diced
1 pint sour cream
2 c shredded cheddar or cojack cheese

Place all in a bowl, mix well, and pour into a casserole dish. Bake at 350º for 40 minutes or until bubbles. This makes one dish so you want to double the recipe for 2 dishes.

And an egg dish: This is from my Church Cookbook and serves 25 cut into 4x6 inch pieces:

CALICO CUTS

Ingredients:
20 eggs
2 quarts evaporated milk
3 T salt
3 T celery seed
2 1/2 c chopped pimiento
10 pounds cheese, shredded
1 1/2 T black pepper
Bisquick Mix

Make a crust out of the Bisquick Mix - well tell you how on the box. Roll out a thin crust from the Bisquick mix and place it in a pan measuring 26x17".

Beat eggs; add remaining ingredients and pour on top of the crust. Bake for 12 to 15 minutes at 375º. You could probably cook that at home and reheat it in your class. I wouldn't leave it overnight with the crust on the bottom uncooked.

I've successfully duplicated McDonald's breakfast burritos. I just scramble eggs with peppers and sausage and folded them into a tortilla with cheese. This cooks fast and goes together quickly, too. All you'll need is to add a bowl of salsa and you're set. If the kids are of an age to help, they can top the tortilla with the cheese and fold them up.

If you can do it the night before, this is very good. Make 2 of them.

Show them "basic skills", like how to boil an egg, and toast bread, or english muffin, or waffle, maybe cut up some fruit. But just keep it basic so that it's easy on you and you are teaching them the basic neccessities that they need to learn in order to become a responsible, healthy, member of society. Great Luck!!! :)

There are a lot of recipes I could give you but having had kids know only too well that this one won't eat this, this one won't eat that, so keep it simple. Scambled eggs with cheese, (onions and green pepper if you think they can handle it), sausage links or patties, biscuits with butter and jam, grapes or cut up strawberries. Good luck.
