GROUND MEAT CASSEROLE
1 lb. ground meat
1 onion
1 can cream of mushroom soup
1 can milk
Salt & pepper
1 pkg. egg noodles
1 can peas
Cheese
Cook onions until done and add ground meat. Cook egg noodles and add peas. Heat milk and soup until boiling point. Put layer of ground meat, peas, noodles and top with grated cheese. Pour soup on top. Bake in oven until cheese melts and browns, about 30 minutes at 350 degrees.

GROUND MEAT & POTATO CASSEROLE
1 1/2 lbs. ground meat
1 onion (med.)
2 to 3 med. potatoes
1 can Campbells pork & beans (soup can size)
1 sm. can tomato sauce
Cut potatoes in slices in bottom of casserole (like thick potato chips). Slice onion in rings, separate rings and put on top of potatoes. Pack ground meat on top of potatoes and onions. Pour beans on top of meat and tomato sauce on top. Poke knife down thru to bottom and pull to side so some of sauce drips thru. (About 4 to 5 times and around edges.) Put in 350 degree oven for about 1 1/2 hours or until meat is done.
*******************************************
GROUND MEAT & RICE CASSEROLE
1 pkg. Lipton onion soup mix
1 can cream of mushroom soup
1 pkg. (4.7 oz.) Lipton rice mix, any flavor
1 lb. ground meat, beef or turkey
1 med. onion, chopped or 1 c. chopped green onions
Salt & pepper to taste
1 c. water
In large iron skillet, brown ground meat with onion. Pour off grease. Add onion soup mix, mushroom soup and salt and pepper. Add 1 cup water and the rice mix. Cover and simmer until done, stirring occasionally. Serve with green salad for a complete meal.

Cheesy beef enchiladas - not only quick and easy, but also very, very good!
1 pound ground beef
1 (16 ounce) jar salsa, divided
1 1/2 cups shredded cheddar cheese, divided
1 (12.5 ounce) package flour tortillas
1. Preheat oven to 350 degrees F. Brown meat in large skillet; drain. Return meat to skillet. Add 1/2 cup each of the salsa and cheese; mix well.
2. Spread 1/2 cup of the remaining salsa onto bottom of 13x9-inch baking dish. Spoon 1/4 cup of the meat mixture down center of each tortilla; roll up. Place tortillas, seam-sides down, in baking dish. Top with the remaining salsa and cheese.
3. Bake 20 min. or until heated through.
I usually add refried beans with the meat and green chile sauce for the top. Sometimes I'll use jalapeno cheddar flavored tortillas. The recipe is pretty customizable!

Tacos! It takes like 10 minutes to cook the meat. And if you have pre-shredded cheese and pre-cut lettuce, you can have food on the table in 20-25 minutes. If you don't have a packet of taco seasoning mix (my favorite is Old El Paso Mild, because it has no MSG in it), you can make your own. I'm including a link to a recipe for that, below. Good luck, and bon appetit!

4 large Idaho potatoes, scrubbed
1/3 to 1/2 cup extra-virgin olive oil, divided
4 to 5 sprigs fresh rosemary, finely chopped
Salt and freshly ground black pepper
2 teaspoons crushed red pepper flakes, divided
4 to 5 cloves garlic
1/2 pound ground sirloin
1/2 pound ground pork
1 tablespoon grill seasoning
2 teaspoons fennel seed
2 teaspoons Worcestershire sauce
3 tablespoons capers
Handful fresh flat-leaf parsley
2 teaspoons anchovy paste
1 teaspoon lemon zest
3/4 cup pitted black or green olives
4 slices sharp provolone or thinly sliced smoked mozzarella
4 crusty rolls, such as sesame Keiser rolls, split
2 vine ripe tomatoes, thinly sliced
10 to 12 basil leaves, torn or shredded
1/2 red onion, thinly sliced
Heat oven to 500 degrees F.
Cut 10 wedges from each potato and place on a baking sheet. Drizzle a couple tablespoons of oil over the potatoes to coat them lightly then season with rosemary, salt and pepper and 1 teaspoon crushed red pepper flakes. Throw a couple of cloves of cracked garlic on the sheet with potatoes. Roast 25 minutes, turning once.
Heat 1 tablespoon oil in a large skillet over medium-high heat. Place ground meats in a bowl and add a 2 to 3 cloves of grated garlic, grill seasoning fennel seed, 1 teaspoon crushed red pepper flakes, Worcestershire sauce. Mix the burgers and form 4 patties. Make patties thinner in the center - burgers bulge as they cook. Cook burgers 5 to 6 minutes on each side.
While burgers cook, sliced cheese and tomatoes, onions and basil and reserve.
In a food processor, combine capers, parsley, anchovy paste, lemon zest and olives. Turn processor on and drizzle in 3 to 4 tablespoons oil until a thick paste forms.
Melt cheese on burgers.
Toast buns.
Place burgers on buns and top with tomato, basil, red onions and slather the bun tops with some olive tapenade and serve with oven fries.

Depends on the ground meat. Ground beef, the simplest thing to do is to turn it into hamburgers. Ball up a handful of ground beef, flaten it out a little to form a patty and then grill or fry it. Very basic recipe as you don't season, and you can season or dress up a hamburger however you like before you start cooking it. The most basic seasoning is salt and pepper, but you could do like a taco burger by seasoning the ground beef with taco seasoning.
Ground pork you could get some spices used for making sausage and turn it into sausage patties. One such recipe uses marjoram, salt, powdered sage, savory, and nutmeg for the spices
One of my favorite recipes is for a Civil War era meatloaf.
1/2 pound ground ham
1/2 pound sausage
Salt and pepper
4 tablspoons milk
1 egg
1/2 cup bread crumbs
1/4 cup water
1 teaspoon dry mustard (ground)
You mix the meats together with the salt and pepper until well seasoned then add the egg, milk and bread crumbs, again mixing these ingredients in well. In a small saucepan heat the water then add the mustard and bring to a boil then add to the meat mixture. Place in a loaf pan and bake for 1 hour at 375 degrees F.
I usually don't have the ground ham and sausage so I make it with a pound of lean ground beef. Also, if you're mixing by hand, make a deep indentation in the meat mixture before adding the water mustard mixture. Since the meat is much cooler than the boiling water, I use it as a bit of insulation so I dont get burned and fold the meat over, slowly mixing the water and mustard in this way until the temp of the water cools down. It always ends up producing a nice and moist meatloaf. I also double the amount of bread crumbs and add fresh herbs like sage and chives (and ocassionally oragano) and turn it into meatballs.
Ground chicken or ground turkey could be used in place of ground beef for making a spaghetti sauce. You could also use them to make burger patties out of, but you may wish to add a little egg and breadcrumbs to keep it together.
Ground lamb could be used in place of the pound of boneless lamb or mutton you'd chop to make Dingle pies.
1 pound boneless mutton or lamb
1 large onion, diced
2 carrots, diced
1 potato, diced
2 celery sticks, diced
1 egg, beaten
salt and pepper
5 cups plain flour
1 cup butter or half butter and half white vegetable shortening
1/2 cup very cold water
Sieve flour into a large bowl and add butter to the flour. Rub in the butter with your fingertips or pastry blender lifting the mixture as much as possible to get air into it. Add the water and mix until the mixture sticks together. Place on a floured work surface and kneed lightly until smooth. Wrap in baking pargment or foil and refrigerate for 20 mintues.
While the dough is refrigerating, trim off any fat or gristlke from the meat and chop up into small pieces (if your using the ground lamb, you can skip this part). place in a bowl and add the vegetables. Season with salt and pepper and mix well.
Preheat the oven to 350 degrees F. Then take out the dough and cut off a third of it to set aside for making tops later. Roll out the rest and use a small plate to cut out six circles. Place a little meat mixture into the middle of each of these circles. Then roll out the dough you set aside and cut into six circles a bit smaller than the first six. Place these over the first six, moisten the dough a little, and roll up the edges to seal in the meat mixture.
Cut some vent holes into the tops of each pie to allow steam to escape while baking. Brush the tops with the beaten egg then slide the pies onto cookie sheets. Bake for an hour.
