Guess your wife is doing a good job, my todd loves them too! It's funny how whatever you expose them to, they will eat. Be thankful.

Some toddlers don't like veggies, some don't like meat, etc.

My kids at that age would eat just about anything that wasn't tied down. My four and a half year old has only just started not eating a few things he doesn't like...and there are very few things like that. The rule is still that he has to take one bite...he rarely won't eat more than one bite.

Oh yes, I know many toddlers that love veggies. Introduce it to them early. Think of creative ways to cook them up, and watch them enjoy.
I saw Rachel Ray dip zucchini sticks into egg and pretzel crumbs and fry them with chicken fingers for the kids. They look delicious. Couldn't tell the difference.
Applaud your son when he eats them, don't discourage him. it's healthy for him.

kids take time to get used to new foods, but if they are exposed to a lot of variety over time, they are likely to not be picky eaters.

I know grown-ups lots of times didn't like veggies as a kid because they were canned and mushy. If we had been exposed to more fresh veggies, we probably would have liked them better.

My daughter is almost 7 and STILL loves most things of the veggie variety. (thank my stars!) His food preferences mght change but I think you can encourage it and also be thankful he does gobble them up!

Congratulations that your child likes vegetables.

Keep in mind, that you're a role model - make sure they don't "catch" your attitude towards vegetables!

Good luck.

My son goes through phases, but he will more than likely love them for life. Congrats.
