Are you in North, South, or Central NJ or willing to travel to another region of NJ?
Are you willing to have a Friday, Sunday, or earlier in the day Saturday wedding?
These factors will save you more than you can imagine.
Is your $5k, for the entire wedding or just the reception site, food & beverages?

I feel your pain! I also am in New Jersey and trying (still) to find the perfect place on a budget! I have a few questions for you..
1) Do you mind the wedding being outside?
2) Will the wedding & reception both be in the fall (and is the reason for your Autumn/Thanksgiving theme)?
3) Do you have an specific types of venues in mind? (ie, hotel, VFW, Knights of Columbus, Mansion, outside garden)

the above is a list of banquet facilities. Many places don't list prices online since they can vary, so you can look through that list and find some places you like and contact them for pricing.
VFW's and Knights of Columbus halls are all over the place, they generally are alot cheaper to rent. You would need to decorate and probably hire a caterer or you could have a pot luck reception where everyone brings a dish.

that is a link to NJ Botanical Gardens. You may be able to contact them and ask if they rent out space for a wedding-which would be lovely for a autumn themed wedding.
I also did a search for gardens in nj and got a lot of results, you could try to do the same.

Well....you can have it at VFW or at the woman's center (I think they are gorgeous) - check out the woman's center in Montclair- they have a beautiful space and it is very inexpensive to rent out. You can also try FIESTA in lyndhurst on rt. 17 (google it) - the prices are reasonable (they start at $55 a person with everything included).
As far as food - if you decide to have it at a location such as FIESTA (they have pretty good low prices) you may see if you can hold a brunch instead of dinner - have it for 4hours instead of 5 or 6 and hold it on a Sunday or Friday evening.
As far as a photographer (something I would personally splurge on) may be really expensive - you can give each table a disposable camera and have ppl take pictures and maybe have a family member take the other pictures of yourselves...etc.
DJ - go local - college kids especially
centerpieces and decoration - go with candles! (there is much debate about the candle) but i'm sure there is a way to make it look nice - it would give it a nice intimate and warm feeling.
Invitations - do them yourselves!! save a lot of money - but you will def. need the time to do them

Would you consider a Thursday evening? Prices can be as much as half of what you pay on a Saturday.
The other thing to consider is looking at restaurants that are closed on Sunday in the day time. They will usually open for a private party.

my favorite is a clear bowl with fall colored marbles or stones in the bottom and leaf shaped & colored floating candles. Then add fake fall leaves around the table instead of the typical rose petals. Head table do the fake leaves down the front of the table with votives in clear cups lined all the way across the front of the head table.
