First have him outline what he wants to accomplish with his project, what the teacher is asking for. Then help him decide how he will do the project and get him any supplies needed and show him how to do the research.
Remember it is his project you are the helper not the manager.
He may only need to draw a map with the major cities or he might have to write a paper on the history of the county or the food and what is produced you can't know until he explains what he is doing.

there's a lot of Italian food that could be easy for a child to relate to, so you could discover fun facts about pasta or other fav foods of the culture. There's also some fun thing like the leaning tower of pizza, or the romans and mythology. Or what other kids are doing in Italy. Check out the link

let your child do their own project.
Devon: yes, the child is only 6. The teacher obviously wouldn't have given them an assignment they couldn't handle. The parent shouldn't be doing the childs homework. end of story.
