Two cameras that will give you excellent 8X10 prints are the Canon PowerShot A630 and Fujifilm Finepix E900.
The Canon is 8 megapixels, 4X optical zoom.
The Fuji is 9 megapixels, 4x optical zoom.
Both cameras are very good on AA rechargeable batteries, and have manual controls in addition to auto. The Fuji has a little less delay between shots.

Well, I have this http://www.overstock.com/Electronics/Polaroid-T737-Digital-Camera/2601727/product.html . It is a good camera. It is a little lower than your price range but I would say it is a really good one for photography. It has twenty-nine settings(These are the names of the settings: automatic, manual, face tracking, landscape, portriat, sport, night landscape, night portriat, sunset, children, pet, collection, flower, food, fireworks, party, surf&snow, autumn leaves, soft flowing water, splashing water, text, panorama, sepia, black&white, vivid, neutral, red filtered, green filtered, and blue filtered.) It is easy to work and I am happy with it.
