use Panko bread crumbs.
Take 5 boneless chicken breasts and clean them up.
Then spread about a half cup of flour onto a plate and season it. I used Emeril's Essence, but you can use anything. 2 eggs and then about a cup and a half of the Panko bread crumbs mixed with Parmesan cheese. ( I assume you know to put the flour, eggs and panko crumsb in 3 separate dishes :)
Place a cooling rack onto a baking sheet and spray it with Pam or any cooking spray. Then place each piece of breaded chicken on the rack.
Cook in the oven at 375 degrees for 20-25 minutes or until the tops are slightly browned.
You can take them out and add some pasta sauce and shredded mozzarella. Put it back in the oven and broil it just until the cheese melts. Serve over a bed of pasta and you have EASY chicken parmesan!!
One thing that I found that makes clean up easier is to use paper plates for the flour and the bread crumbs....then you can just toss them in the garbage!!!

Quick Chicken Parmesan
4 Boneless Chicken Breasts, pounded flat
1 jar Spaghetti Sauce (I use Prego mushroom and garlic)
3 oz. Mozzarella Cheese, grated
2 cups Italian Bread Crumbs
2 oz. Parmesan Cheese
1/2 tsp garlic salt
1 egg, plus 1 tbs water, slightly beaten
Mix Italian breadcrumbs, Parmesan cheese, and garlic salt together in bowl. Beat 1 egg in another bowl, 1 tbs water and a dash of garlic salt. Dip chicken in egg, then in crumbs and fry in oil until brown on each side (10 – 15 min each side). Pour spaghetti sauce over chicken and sprinkle with cheese, cover so cheese melts and serve. Makes 4 servings.
Chicken with Hot Green Chile Salsa
4 boneless chicken breasts, cut into strips
1 tbs vegetable oil
2 tbs butter
¼ cup bottles green chile salsa
1 cup sour cream
grated parmesan cheese
Combine the oil and the butter in a skillet over medium heat, add the chicken strips, and sauté until lightly brown on all sides. Stir in salsa and sour cream, reduce heat to very low, and simmer until chicken is tender and the sour cream and salsa blend into a thick sauce, about 10 minutes. Sprinkle chicken with parmesan cheese and serve. Makes 2-4 servings.

4 - 6 chicken breasts, 1 can of mushroom (or any "cream of" soup) and a cup of rice. Throw it in a 9x13 for about a 1/2 hour (or until the chicken is done). Voila!

Put them on a plate that can be placed in the oven for a few minutes, cover the chicken with a little spaghetti sauce and pizza cheese. Place it in the oven until the cheese browns a little. After it is removed, spoon so pasta on the plate covered with just a bit of the sauce and serve with Cesar salad and garlic bread...yum.

cut them up into bite size peices
coat with some milk
roll into some bread crumbs
put on cookie tray and bake @ 350 for 15 minutes, or until golden brown
Viola.....Chicken Nuggets :)

Get some stove top stuffing, pound out the chicken breasts, wspoon out some stuffing, wrap it up and pin with toothpicks. bake
Remember to baste with something.

chicken stirfry!!!! just add veggies that you like from broccoli, carrots, sweet peas. mushrooms, baby corn, water chestnuts, leeks, shallots etc... lol combine with sesame oil and asain inspired stir fry sauce served over steamed white or brown rice, even noodles! and voila! dinner is served :)
