Oven is old and doesn't have a fan. It's a gas oven. Which is the best shelf to use to get your food cooked in the right amount of time?

Depends on the food...pies, cakes, desserts in the middle, upper area. Pizza on the lowest rack, roasts, veggies about the middle. The temp. may not be accurate, either. Check with a thermometer.

This involves using the recipe. Baking is normally done on the bottom shelf while meat is on the center rack. I do most foods in the center.

I'd go middle so that it has an equal amount of heat getting it at the top and bottom.
