For example if a company or a person has caused my credit score to be lower by posting incorrect information about me and I could not get low rates on my mortgage and car payments, can I sue them for the money that I have overpaid. No, you cannot sue them successfully. It is your responsibility to check the content of your credit file (it's free and mandated by law to be so) prior to you engaging in any contract which requires an interest payment.

Furthermore, you signed and agreed to the interest rates charged. How would you explain that in a court of law ?

You can't necessarily sue them for the difference in your payments successfully, but you can try. It is criminal to do what you are describing, so there will be legal ramifications if the person is convicted. Your best bet is to consult a lawyer.
