i want to be paid in Euros instead of the US dollar

This is very unusual. Some companies will pay staff who travel a lot overseas in the currency of the country where they work most often, but if your job is US-based I don't think they will be keen to pay you in euros. This will involve them in extra cost and hassle, since every payment to you will be a foreign currency transaction.

It might also lead to the IRS asking the company and you some hard questions about why you want this done. Money laundering is a very hot topic, you know.

So unless you are a spectacularly desirable employee, they may be tempted to give the job to someone who will be less hassle to pay.

No. Since the official currency of this country is the dollar, that is what you will be paid in. You have no power to negotiate that.
