Super nachos with steak meat, tortilla chips, sour cream, guacamole, cheese, tomatoes and jalapenos! Yummy!

Nacho's. Can layer shredded beef, pork, chicken, or sauteed shrimp, and all your fav toppings, onions, jalapeno's, cheeses, tomatoes, and top wth sour cream, guacamole, and a big side of homeade salsa.
Quick at home salsa
1 - 14 ½ ounce can diced tomatoes with juice
2 tsp roses lime juice
1 tablespoon dried or 2 teaspoons fresh cilantro minced
½ cup sliced green onions, (or any kind you like best)
½ yellow, red, or orange bell pepper, chopped
1/3 cup sliced jalapeno peppers, with a couple of tablespoons juice from jar (or to taste)
1 tsp ground cumin
1/3 tsp ground oregano
Dash black pepper
1 tsp brown sugar( can use splenda brown sugar if saving carbs)
1 cup tomato juice or spicy V-8 is good also
Mix all ingredients well, and process in food processor or blender till chunky pureed.
If you don’t have a food processor or blender,
Buy the petite diced tomatoes and hand chop the rest very fine for your salsa. It’s very good larger chunk like this also.

Out of the list, my nachos. They're loaded enough to feed 8-10 people. But right now I really want a quesadilla.
