Most definitely all sorts of things go rancid oils are an obvious one. Flour also goes rancid as well. Keeping them cold will slow down the process but inevitably that too, if left would go rancid.

Vegetable Oil
1 to 6 months opened; 6 to 12 months unopened
Times vary according to type of oil, method of processing, etc. Some companies recommend up to 1 year opened and 2 years unopened for certain of their oils. For oils with a shorter storage time, some companies recommend refrigerating the oil after opening. NOTE: If the container has sat unopened for the total storage time, it no longer may be fresh the entire "opened" storage time.
Storage Tip #1: Store in a tightly closed container in a cool, dark place.
Storage Tip #2: Some of the oils that may have a shorter storage life include walnut, sesame, hazelnut and almond oils.
Storage Tip #3: Oil that has been stored too long will go rancid and develop an undesirable taste and odor. If you haven't used an oil for a while, smell it before using it in a recipe.
Storage Tip #4: You can prolong the life of oils by storing them in the refrigerator. Some, such as olive oil, may become cloudy in the refrigerator but usually clear after sitting at room temperature to warm up.

Yes. It does spoil. It gets rancid. In Gujarati language, it is call Khomu or khoru.
Its taste and even colour can change a bit and even give soar throat. It gets cloudy.
But it can be kept out side for days before it get bad. Depends on many things. Such as:
1. Temp.
2. Handling.
3. Time.
Refrigeration will extend the life but not for ever.

Yes,it will go rancid. If in a light colored bottle place in a dark place. It's good to put oils in darker bottles for the counter top and refill as needed. No, I would not put oils in the refrigerator to prolong shelf life.

Oh my does it!!! I had this happen to me just about a month ago and NEVER had a clue that oil went bad....I could totally tell when I was cooking. It had a terrible smell and made the food taste horrible!

Yes it oxidizes You can extend the life by squeezing a Vitamin E Capsule into the bottle (Antioxidant)
