I've always had a problem with this riddle. It doesn't say in which direction the man with the seven wives is heading. You could've met him going in the opposite direction, or he could be heading in the same direction.
So, strictly speaking there is insufficient information to determine the exact number. The only person in the rhyme that you KNOW is going to St. Ives is yourself. So the answer (as everyone has said) is ONE.
If you were all going to St. Ives
You = 1
Man = 1
Seven Wives = 7
Seven Sacks, aren't people
Seven Cats (per sack) = 49 cats per wife = 343
Seven Kittens per cat = 2401
= 2753 sentient beings
