If food wasn't preserved you wouldn't have dairy,frozen foods,canned foods most foods you eat have been preserved before you ate them, and it's also important because think about how long it takes to ship out all food from farms and factories.

Don't forget Mr. Birdseye. He began the process of freezing veggies in the early 1900's. That was right after refrigerators started having an ice box (freezer) in them. He actually started the whole trend of convenience foods, including TV dinners. He sold out early, and whomever bought him out just ran with the TV dinners. Stouffer? I can't remember right now.
