What are advantages and disadvantages of fixed and foldable butts? Why two versions of same rifles are manufactured, one with foldable and othere with fixed like Indian INSAS and Excalibur assault rifles. Wouldnt it be simpler to produce only one version (preferably foldable)?

Everything with a firearm is a compromise. There is and probably never will be one perfect rifle for every circumstance. Rifles have long heavy barrels for accuracy , short light barrels for ease of handling. Large caliber for long range, small caliber to reduce recoil and weight, and on and on.
The primary reason for a folding stock is to facilitate the ability to have the weapon with you in confined spaces where it would be imposable to take a full length fixed stock rifle. The down side is that you have to give up balance and rigidity to do so.

a fold able assault rifle is great for close quarters, but in a fixed position you are much better off with a fixed butt - especially for hunting animals that don't have to be stalked or for target practice , boils down to personal preference.

The movable butt stock throws off the balance a bit. BLUF is that you are more acurate with a fixed stock.

Folding butts are for use by troops in confined space, paratroopers, drivers, armored personnel troops etc. . etc..
