Generally, you work in the following areas:

Fluid dynamics (airfoil theory, supersonic flow in a rocket nozzle)
Thermodynamics (internal combustion engines)
Heat transfer (cooling an engine)
Stress analysis (to make parts strong yet light)
Circuit design (to make control circuitry for planes)

It's hard, but it's rewarding. Plus, you get to say, "Actually, I AM a rocket scientist."
