To explain - I am a PhD student but in my country I earn less than 300 S. This job would offer me over 1000 S a month, so I am there to stay for at least one year.

That's a tough call. Most employers that have openings that won't amount to much are in fear of people that are over qualified. If they like you, and know you have the smarts to be so much more, they are afraid to train you and then you might up and leave to another company.

You just really need to give good reasons why you would want a job that is under your abilities. Good luck!

Explain why you want the job if it is truly beneath you. They think you will take it to get a few paychecks while you look for something better. Why are they wrong?
I was a CPA but had been a bookkeeper and didn't want to be a CPA but couldn't land a bookkeeping job in a CPA firm they all thought I would want to have paid continuing education and other perks that were for CPAs not bookkeepers.
