60GB has two chips from PS2 (CPU - Emotion Engine, GPU - Graphics Synthesizer). That's why more than 95% of PS2 games run on it.
80GB has only one chip from PS2 (Graphics Synthesizer), CPU is software emulated. That's why ~80% of games can run.

Check if a certain PS2 game can be played on PS3 here:

As many times as I have seen this question I know the answer to it and don't even have a PS3. Other than 20 more gigs, the Emotion Engine is removed from the 80 gig reducing its backward compatibility from 100%. The 80 gig uses software emulation now.

the 60 gb ps3 plays 99% of all the PS2 games where as 80 gb plays on an average of 75 to 80% of PS2 games...

obviously there is a difference of 20 gb but thats the only difference... thus u will see the price of 60 gb is 480 compareted to 80 gb for 500 dollars..

The 80GB plays PS2 games through software emulation- so it can play most PS2 games, but not all, and the 60GB plays PS2 games through hardware emulation via the emotion engine, so it can play all ps2 games.

Also, the 80GB has 20 GB more memory on the hard drive. Though in my opinion the 60GB is better due to direct hardware emulation.
