Please note that was a Sell By date; not Use by. It'll be fine for at least another month (assuming the packaging is still sealed).

I just finished a chunk of cheese that I'd overlooked in the fridge, was a hard extra extra extra sharp white cheddar. 2 years past expiration date. Honest. Never opened.

Dang - was soooooo good. I have never devoured a cheese so fast. Just the thought of it now makes me want to go out and buy some more to age .. mmMMhmm.

I know it's not Velveeta (I just wanted to share).

Yes...they always have a time buffer on those dates for their protection. And its more of a guideline not an exact date.

But as long as it looks and smells good I think it would be just fine.

I would eat eat anyway:-)

Are you just opening it or has it been open for a while? It's cheese right? If there is any green stuff growing on it.....shave it off and put it to the side. If you get sick, eat the green stuff......it's penicillin.
